To expand on the yeast thing: Wild yeast grows naturally on cereal grains like wheat, and Egyptians and other ancient peoples would use whole kernels to make their flour, so their flour would naturally have yeast in it. Modern flour won't have the natural wild yeast, so we use domesticated yeasts to make a rise! (They would have also brewed beer with wild yeasts!)
